Cantonese-Style Chicken and Mushroom Stir-Fry

Step 1
Wash the button mushrooms and cut the chicken breast into bite-sized pieces.

Step 2
Season the sliced chicken breast with salt, a splash of light soy sauce, oyster sauce, sugar, pepper, cooking wine, and cornstarch. Mix thoroughly, then add a spoonful of cooking oil to lock in moisture. Marinate for about 20 minutes.

Heat oil in a pan and add the marinated chicken breasts.

Stir-fry over high heat until the color changes, then remove and set aside.

Heat oil in a wok, add garlic cloves, and stir-fry until lightly golden brown, releasing the garlic aroma.

Add the sliced button mushrooms.

Stir-fry until cooked through and tender.

Add the cooked chicken breast.

Stir-fry until evenly coated, taste for seasoning → If it seems bland, add a little light soy sauce and oyster sauce to taste → Stir-fry until well-seasoned.

Finally, sprinkle with chopped green onions and serve.
